When Does A Plant Start Maturing?

I just bought some new tomato plants, and the label says they’ll mature in 60 some days. When does that time period start: when the flower bud appears, or when the actual fruit begins to grow?

    That period starts from the date that your plant germinated….which was probably back around May.
